- 3 bananas
- 2 eggs
- 1½ c. whole milk
- 2 c.s flour
- ¼ c. brown sugar
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp salt
- 1 c. chopped walnuts
- ghee, butter, or coconut oil for the pan
Instructions:
- One of the nice things about this particular camping recipe is that you can make the mix for the pancakes at home. Just combine the flour, brown sugar, cinnamon, baking powder, and salt in a resealable bag before you leave for the campground.
- Once you’re ready to make breakfast, add two bananas to a medium bowl and mash until smooth.
- Crack the eggs into the bananas and combine thoroughly.
- Dump in the dry ingredients on top of the wet ingredients and mix until combined. Be sure not to over-mix; if the batter seems a little thick, add a splash of milk. It’s OK if the batter has a few lumps.
- Over your campfire, heat in a cast-iron skillet on medium heat. Add a spoonful of butter to the center of the skillet and allow it to lightly browned, swirling to coat the entire pan.
- Add 1/3 cup of the pancake batter into the skillet and top with chopped walnuts.
- Allow the pancake to cook until bubbles form, then flip using a spatula and cook until golden brown. It should take approximately two minutes per side of the pancake.
- Repeat until the pancake batter is gone and serve, topped with maple syrup, sliced bananas, chopped walnuts, and butter.
