Camping Recipe: Cheesy Cast Iron Skillet Dip

Ingredients

  • 3 c. shredded cheddar
  • 8 oz. cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tbsp. freshly chopped chives, plus more for garnish
  • 1 c. lager beer
  • Kosher salt
  • Pinch of cayenne pepper
  • Baguette

Directions

  1. Wash and dry the produce.
  2. Mince your garlic and chop the chives, adding more for garnish as needed.
  3. Build a strong fire and lower the grate.
  4. In your cast-iron skillet, combine the cheese, cream cheese, garlic, most of the chives, and the beer. Season with salt and cayenne pepper to taste.
  5. Cover the skillet with foil and set on the grill over the fire.
  6. Cook until the cheese is melted and gooey. Approx. 15 minutes.
  7. Meanwhile, slice the baguette and grill the slices over the fire until just charred.
  8. Serve the dip hot with the baguette slices on the side.
