- 3 Tbs chilipowder
- 1 teaspoon ground cumin
- 1 1/2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sugar
- Dash of cayenne pepper
Preassembly tip: combine these seasonings together ahead of time and store in a small food storage bag. When it’s time to make the chili, dump it all in together! If you want to kick up the heat a bit, increase the cumin, chili powder, and cayenne pepper.
Fresh ingredients:
- 2 pounds fresh ground beef
- 1 medium-large onion, chopped
- 1/2 cup diced celery
- 1/4 cup diced green bell pepper
Preassembly tip: brown the ground beef with onion, celery, and bell pepper until the beef is brown and the veggies are tender. Drain off the fat and place the mixture in a gallon size food storage bag. Freeze until ready to use!
Pantry ingredients:
- 1 quart tomato juice
- 1 (29-ounce) can tomato purée
- 1 (15-ounce) can red kidney beans, drained
- 1 (15-ounce) can pinto beans, drained
Instructions:
In a 6 quart pot or slow cooker, combine the beef and veggie mixture, seasoning mixture, and remaining canned goods (tomato puree, juice, and beans) and stir well to combine. Simmer on low for at least 2 hours (or low heat in slow cooker for 4-6 hours), stirring occasionally to prevent sticking. Enjoy with your choice of chili toppings like shredded cheddar cheese, sour cream, corn chips, or saltine crackers.
