Ingredients

- 6 slices of a thick, dry bread
- 2 eggs
- 1 cup milk
- 1 tbsp granulated sugar
- ½ tsp pure vanilla extract
- ½ tsp ground cinnamon
- Strawberries
- Walnuts
- ½ lemon juiced
- mint leaves to garnish – optional
Instructions:
- Start by washing the strawberries and then dicing them. I recommend setting them aside and sprinkling them with granulated sugar.
- Roughly chop the walnuts and season with sugar, a sprinkle of salt, and cinnamon.
- Meanwhile, cut a large square of aluminum foil and form it into a deep baking dish. Spray generously with cooking oil.
- Slice the bread and place it in the “baking dish.”
- In a bowl, whisk together the milk and eggs with the sugar, vanilla, and cinnamon.
- Pour the egg mixture over the toast to coat.
- Sprinkle the diced strawberries and walnuts over the top. Add a dash of cinnamon to each slice and then top with more foil.
- You’ll want to create a seal so the toast will cook evenly.
- Set over the fire and cook until the toast is crispy and cooked through.
- Serve with a squeeze of lemon, more fresh strawberries, and a dollop of whipped cream.
