Camping Recipe: French Toast Foil Packet

Ingredients

  • 6 slices of a thick, dry bread 
  • 2 eggs
  • 1 cup milk
  • 1 tbsp granulated sugar
  • ½ tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • Strawberries
  • Walnuts
  • ½ lemon juiced
  • mint leaves to garnish – optional

Instructions:

  1. Start by washing the strawberries and then dicing them. I recommend setting them aside and sprinkling them with granulated sugar. 
  2. Roughly chop the walnuts and season with sugar, a sprinkle of salt, and cinnamon.
  3. Meanwhile, cut a large square of aluminum foil and form it into a deep baking dish. Spray generously with cooking oil. 
  4. Slice the bread and place it in the “baking dish.”
  5. In a bowl, whisk together the milk and eggs with the sugar, vanilla, and cinnamon. 
  6. Pour the egg mixture over the toast to coat. 
  7. Sprinkle the diced strawberries and walnuts over the top. Add a dash of cinnamon to each slice and then top with more foil. 
  8. You’ll want to create a seal so the toast will cook evenly. 
  9. Set over the fire and cook until the toast is crispy and cooked through. 
  10. Serve with a squeeze of lemon, more fresh strawberries, and a dollop of whipped cream.
