Ingredients

  • 3 medium onions, cut into wedges
  • 3 pounds to 3-1/2 bone-in beef short ribs
  • 1 bay leaf
  • 12 ounces bottled beer or nonalcoholic beer
  • 2 Tbsp brown sugar
  • 2 Tbsp Dijon mustard
  • 2 Tbsp tomato paste
  • 2 tsp dried thyme
  • 2 tsp beef bouillon granules
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 Tbsp all-purpose flour
  • 1/2 cup cold water

Instructions

  1. Peel and cut onion into wedges.
  2. Place onions in a 5-qt. slow cooker and add in the ribs. Top with the bay leaf.
  3. In a separate bowl, stir together beer, brown sugar, Dijon mustard, tomato paste, thyme, salt, and pepper. Combine until smooth.
  4. Pour over meat, being careful to cover it as much as possible.
  5. Cover the slow cooker and set to low for 8 hours.
  6. Carefully remove the meat and onions, setting aside and covering to keep them warm.
  7. Discard the bay leaf and skim the fat from the remaining liquid in the slow cooker.
  8. Transfer the remaining juices to a small saucepan and set on the stove.
  9. Slowly, bring the juices to a boil and add in flour and water, whisking until smooth.
  10. Continue to stir while you bring the sauce to a boil and cook for 2 minutes until thickened.
  11. Serve the ribs with the onions and drizzle the sauce over the top.
