- 3 medium onions, cut into wedges
- 3 pounds to 3-1/2 bone-in beef short ribs
- 1 bay leaf
- 12 ounces bottled beer or nonalcoholic beer
- 2 Tbsp brown sugar
- 2 Tbsp Dijon mustard
- 2 Tbsp tomato paste
- 2 tsp dried thyme
- 2 tsp beef bouillon granules
- 1 tsp salt
- 1/4 tsp pepper
- 3 Tbsp all-purpose flour
- 1/2 cup cold water
Instructions
- Peel and cut onion into wedges.
- Place onions in a 5-qt. slow cooker and add in the ribs. Top with the bay leaf.
- In a separate bowl, stir together beer, brown sugar, Dijon mustard, tomato paste, thyme, salt, and pepper. Combine until smooth.
- Pour over meat, being careful to cover it as much as possible.
- Cover the slow cooker and set to low for 8 hours.
- Carefully remove the meat and onions, setting aside and covering to keep them warm.
- Discard the bay leaf and skim the fat from the remaining liquid in the slow cooker.
- Transfer the remaining juices to a small saucepan and set on the stove.
- Slowly, bring the juices to a boil and add in flour and water, whisking until smooth.
- Continue to stir while you bring the sauce to a boil and cook for 2 minutes until thickened.
- Serve the ribs with the onions and drizzle the sauce over the top.
