Ingredients:
6 chicken breasts
1 can black beans
1 can sweet whole kernel corn
2 ½ cup salsa
1/2 peach preserves
2 servings prepared rice
Corn or flour tortillas
1 packet of taco seasoning
Olive oil
Lime wedges (optional)
Instructions:
Pat the chicken breasts dry with a paper towel. Cube chicken into large, bite-sized chunks and coat with the taco seasoning. Open all the canned veggies, drain, and rinse.
Heat a drizzle of oil over medium-high heat in a large pot. You can use the fire pit at your campsite and a Dutch oven if you prefer.
Sear the chicken until just brown and add in the corn, beans, salsa, and peach preserves.
