Sandwiches are an easy fix for lunch. Who doesn’t love a couple of pieces of bread, some deli meat, some mayo, and a slice of cheese? Let’s spice things up a bit by putting together something you’ve never tried. It’ll be sure to put a smile on everyone’s faces and save time and preparation. Here are a few new recipes to try.
Joanne’s Super Hero Sandwich
Ingredients
Recipe makes 6 servings
1/2 cupolive oil
1 tablespoonlemon juice
3 tablespoonstarragon vinegar
3 clovesgarlic, minced
2 tablespoonschopped fresh parsley
2 teaspoonsdried oregano
1/2 teaspoonblack pepper
1 cupblack olives, chopped
1 cupmushrooms, chopped
1 (1 pound) loafround, crusty Italian bread
1/2 poundsliced deli turkey meat
1/2 poundsliced ham
1/4 poundsliced salami
1/2 poundsliced mozzarella cheese
6 leaveslettuce
1tomato, sliced
Directions
In a medium bowl, combine olive oil, lemon juice, vinegar and garlic. Season with parsley, oregano and pepper. stir in olives and mushrooms. Set aside.
Cut the off top half of the bread. Scoop out the inside, and leave a 1/2 inch outside wall. Spoon 2/3 of the olive mixture into the bottom. Layer with turkey, ham, salami, mozzarella, lettuce and tomato. Pour remaining olive mixture on top, and replace the top half of bread. Wrap securely in plastic wrap, and refrigerate overnight.
In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.
Cut all rolls in half. Place roll bottoms in 9×13-inch pan.
Place equal amounts of ham on each roll bottom. Top with Gruyere.
On each of the roll tops, spread a generous amount of the cream cheese spread. Return the tops to the bottoms making sandwiches.
In a separate bowl, mix together the butter, Worcestershire sauce, onion and Parmesan cheese. Pour over your sandwiches and let sit for at least 20 minutes. (You can make these ahead of time and allow to sit in fridge overnight.)
Place sandwiches, covered in foil, in a preheated 350 degrees F oven. Bake for 20 minutes or until warmed through. Enjoy!
