Thanksgiving In Your RV

So you’ve made the decision to hit the road for the Thanksgiving holiday this year. It’s certainly a wonderful time to sightsee, as just about anywhere you go will have plenty of Fall foliage for you to admire, but you’ll also enjoy less crowded parks. Once the cooler weather sets in, you notice a dramatic change in the number of RVs on the road. Of course, you may notice a spike for the holidays, but it’s nowhere near the level you see during the Summer.

For Thanksgiving dinner, we recommend getting everything you need to make dinner in one trip. Make a list, double check all of your recipes and make doubly sure that you’ve gotten all of the ingredients necessary, so you won’t have to traverse back into town for 1 or 2 items that you forgot. If you’re out, away from civilization. That could be an hour drive into town! The whole point of escaping for the holidays is to get out of the hustle and bustle for a few days. Also, if you have to go on a grocery run a couple of days before Thanksgiving, be prepared to wait in line and deal with large crowd.

We’ve compiled a list of a couple of Thanksgiving Day recipes that we think would save time and money, by using a well-known kitchen gadget: the crock-pot. We all know that RV kitchens sometimes lack enough firepower to be able to cook multiple items and have enormous spreads, so we did some searching and found a couple of great Turkey Day recipes that you could make without your ingredients taking up the entire RV!

Crockpot Turkey Breast

Ingredients

  • 2 onions, chopped
  • 3 stalks celery, chopped
  • 1 lb. baby carrots
  • 1 Tbsp. chopped garlic
  • 4-6 lb. boneless turkey breast, cut in half, thawed if frozen
  • 1 tsp. dried thyme leaves
  • 14 oz. can low sodium chicken broth
  • 1/2 cup white wine or water
  • 1/2 tsp. poultry seasoning
  • 1/8 tsp. pepper

Preparation

Spray a 4-6 quart crockpot with nonstick cooking spray. Place the onions, celery, carrots, and garlic on the bottom of the slow cooker. Put the turkey breast halves on top of the vegetables. Combine the thyme, chicken broth, wine or water, poultry seasoning, and pepper and pour over the turkey breast. Cover crockpot and cook on low for 5-7 hours or until turkey is tender and meat thermometer registers 170 degrees.

Crockpot Maple Glazed Turkey Breast

Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 (8″ x 8″) pan cornbread, crumbled
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3-4 pound boneless turkey breast, thawed if frozen
  • 1/3 cup maple syrup
  • 1/2 cup apricot preserves
  • 3 tablespoons butter, melted
  • 1/2 teaspoon dried thyme leaves
  • Salt and pepper to taste

Preparation

Melt butter in small saucepan. Cook onion until very tender. Remove to large bowl and crumble in cornbread; season with 1/2 teaspoon salt and 1/8 teaspoon pepper. Sprinkle turkey breast with more salt and pepper. In small bowl, combine maple syrup, apricot preserves, butter, thyme leaves, and salt and pepper to taste; mix well. Add half this mixture to the cornbread mixture; place in 4-5 quart slow cooker.

Place turkey on top and pour remaining maple syrup mixture over. Cover and cook on low for 6-7 hours until the turkey registers 165 degrees on a meat thermometer, basting twice with the juices in the crockpot. Serve immediately.
